Made to mark our first restaurant in Scotland.

When we announced it, the question followed naturally: what would a whisky taste like, built the Ottolenghi way? We met with Woven, and many conversations later, this is the answer: a limited edition, made in a single small run.

It pushes contrast over weight, and brightness where whisky usually reaches for depth. Expect notes of grapefruit zest, preserved lemon and pink peppercorn. Clear layers, built to work alongside other flavours rather than overpower them, and a long, pleasing finish.
