Based off a cocktail on the menu at Ottolenghi, this is a slightly smokier, more aromatic take on the classic 'Tommy's Margarita' - with chipotle chilli at its heart.

We use a blend of Ocho Blanco tequila and QuiQuiRiQui mezcal as the base and add agave, water and Supasawa. The thing that makes this one different is a chipotle distillate: chipotle chillies distilled into a neutral spirit, carrying all the flavour and smokiness of the chilli without any of the heat. The result is warm and smoky, without the heat - though a chilli-salted rim will take it as far as you like.

Best served with a rim of Tajin (a Mexican chilli lime salt) or Ottolenghi chilli salt.

Sediment may appear naturally, and any separation is completely normal.

SERVING INSTRUCTIONS - Pour 100ml over ice in a rocks glass rimmed with tajin. Chill and shake gently before serving. Serves 5.
