Maftoul, Zaytoun

Regular price £5.50
Sale price £5.50 Regular price

Maftoul is a Palestinian grain made from sun-dried wheat. It’s larger than couscous and its grains are slightly uneven, because they are rolled by hand. Maftoul is forgiving to cook with – unlike couscous which can turn mushy if soaked for too long or in too much liquid.

Easy to cook, interesting to eat and happy in all sorts of company, maftoul can be used in just about any dish that calls for rice or couscous. Try cooking it with a little saffron and mixing it with cooked lentils, herbs and lots of olive oil; or mix it with roasted diced butternut, medjool dates and your favourite nut. Admittedly, maftoul isn't easy to find in supermarkets - get some for the pantry here.

Zaytoun supports small-scale Palestinian farmers. They’re dedicated to sharing the very best produce from the fields of Palestine, ethically sourced and sustainably grown.
