Biber salçası is a Turkish red pepper paste - chargrilled, mild, with a quiet umami depth that builds rather than shouts. Not always easy to find, but worth seeking out (Yotam reaches for it in soups, stews, marinades). Spread through a sandwich, blended into a butter, stirred through a dip. The kind of thing that, once it's in your fridge, you'll find a reason to use on everything.
