Salt does more than season, it wakes food up. Blackthorn is the one we reach for—grown slowly from Scottish west coast seawater, hand-harvested, each crystal with a structure that snaps cleanly and a depth of flavour that lingers. Within those flakes is a rare balance: the brightness of sodium chloride, a touch of sweetness from calcium, bitter-sour edges from magnesium and potassium, and even tannins from the blackthorn branches that leave a gentle umami echo.

It’s best scattered at the end: over roast chicken, a slice of ripe tomato, even a dark chocolate mousse. A little crunch, a spark of salinity, and suddenly everything tastes more itself. One ingredient only. Organic approved and twice-awarded at the Great Taste Awards.
