Fried green beans with yuzu ginger & miso

These simple pan fried beans are transformed into a very moreish side, thanks to the sweet, salty, sour flavours of our Yuzu Ginger & Miso marinade. This marinade also works wonders for pork belly strips, chicken thighs or prawns.

Ingredients

10g sesame seeds
⅛ tsp caster sugar
2 tbsp olive oil
1 pack green beans, trimmed (350g)
2 spring onions, thinly sliced on an angle (40g)
40g Ottolenghi Yuzu, Ginger, and Miso Marinade
10g coriander leaves, roughly chopped
fine sea salt

Method

  1. Place a large non-stick frying pan over medium heat and add the sesame seeds. Toast for about 3 minutes, mixing often, until golden brown. Transfer to a mortar and pestle. Add the sugar and a pinch of salt, and pound into a coarse crumb. Set aside.
  2. Place the same pan over high heat. When hot, add 1 tablespoon of oil and half the beans. Fry for about 4 minutes, colouring the beans on all sides. Remove the beans to a large bowl, and repeat with the rest of the beans. Return the pan to high heat and cook the spring onions for 1 minute until starting to brown. Add them to the bowl along with  ½ teaspoon salt and toss to combine. Add the yuzu marinade and coriander and mix well.
  3. To serve, pile the beans onto a plate and sprinkle over the sesame seed mix.
