We've found a new panettone maker this year – Pasticceria Scarpato in Italy. After tasting 25 different panettone from 8 suppliers, they came out on top. The dough is incredibly light and airy, almost cloud-like – exactly what classic panettone should be.

The traditional recipe is done perfectly here, packed with raisins and candied fruit, and with that signature airy texture that makes all the difference. It's wonderful with coffee or sweet wine, or turned into the most luxurious French toast for Christmas morning.

Ingredients: wheat flour, eggs, raisins, natural yeast (wheat flour, water), candied citrus peel (sicilian orange peels and “diamond” citron, glucose-fructose syrup, sugar, concentrated lemon juice), butter, sugar, citrus paste (orange, citron, lemon and tardive Ciaculli tangerine peels, glucose-fructose syrup, sugar, lemon juice, acidity regulator: citric acid), emulsifiers: mono and diglycerides of fatty acids of vegetable origin, egg yolk, whole milk, glucose syrup, natural flavours, malt flour, salt, skimmed milk powder.
