This is the ultimate dinner party snack; a poppadom tower with all the salty, sweet, spicy, sour and fresh condiments layered into it. Lime pickle is a spiced preserved lime South Asian condiment that’s intensely sour, salty and tangy and can be quite spicy. Bombay mix is another delicious South Asian delicacy, a crunchy, spicy mix of dried noodles, nuts and legumes. If you can't find lime pickle, you could use preserved lemons mixed with a little chilli paste. If you can't find Bombay mix, you can use any salted, roasted nuts.
Note: we went big and built up three layers of poppadoms to create a spectacularly heaping pile, but feel free to assemble in a double layer if it makes things easier!

| 50ml | olive oil |
| 165g | salted poppadoms, mini sized or regular sized broken into smaller pieces |
| 60g | pomegranate seeds |
| 10g | mint leaves, finely chopped |
| 20g | coriander leaves, finely chopped |
| 50g | golden raisins |
| 200g | natural yoghurt |
| 50g | Bombay mix (see intro) |
| 2 tbsp | pomegranate molasses |
