This is HP sauce, Ottolenghi style: sweet, tangy and piquant. Great on a bacon sandwich, for adding depth to stews, or as a base for a salad dressing. Dates bring the sweetness, tamarind adds the tang.

Storage and shelf life

Store in a cool, dry place. Once opened, keep refrigerated and consume within 4 weeks.
