Roasted Pear with spiced ricotta yoghurt and crumbled biscuits

Ripe in season pears shine brightly in a buttery caramel here and makes for a very quick and easy dessert. If you like, serve alongside pancakes and use any spiced cookies that you have at hand, like gingernuts, or hard amaretti cookies.

Ingredients

2 pears (260g), cut in quarters and cored
2 tbsp water at room temperature
20g light brown sugar
1 tbsp maple syrup
1 lemon, Âĵ tsp finely grated zest and 1 tbsp lemon juice
10g unsalted butter
1 thyme sprig, optional
2- 3 Biscoff biscuits
flaked sea salt
SPICED YOGHURT
100g ricotta
100g greek yoghurt
1 tbsp maple syrup
Âĵ tsp ground cinnamon ground

Method

  1. Preheat the oven to 200C.
  2. Place the pears and water in a medium frying pan or baking dish for which you have a lid (alternatively use foil) and top with the light brown sugar, maple syrup, lemon zest and juice, and butter. Cover and place in the oven for 20 minutes. Then remove the lid and cook for a further 10 minutes until the pears are tender and the caramel has thickened.
  3. Meanwhile, place the ricotta, yoghurt, maple syrup and cinnamon in a food processor and blend till smooth or mix with a spoon in a bowl if you prefer more texture.
  4. To serve, divide the yoghurt between serving plates. Spoon the pears on top along with the syrup, crumble the biscuits over followed by a pinch of salt.
