Ottolenghi Advocaat

We’re going retro with this one…Advocaat was always a festive favourite in many households back in the day. This year we’re bringing it back with a simple homemade version that makes the perfect gift that just keeps on giving, especially if you make the snowball sundae - a super speedy after dinner treat!
Fill up little bottles to gift to family and friends and don’t forget to attach a handwritten tag with the snowball sundae recipe (and to keep a bottle for yourself..)!

Ingredients

ADVOCAAT
500g icing sugar
12 best quality egg yolks
1 vanilla bean, scraped (or 1 tsp vanilla extract)
300ml double cream
500ml light gold rum
freshly grated nutmeg, to serve (optional)
SNOWBALL SUNDAE
whipped cream, unsweetened
lemon sorbet, shop bought
Advocaat
meringues, shop bought, crushed
freshly grated nutmeg (optional)

Method

  1. Advocaat:
    In a large bowl, whisk together the sugar, yolks and vanilla. Stream in the cream and whisk until combined. Lastly, stream in the rum and whisk until combined.
    Strain through a fine mesh sieve into a jug and pour into sterilised glass jars or small bottles and keep refrigerated for up to 2 months.
  2. Snowball sundae:
    Dollop a spoonful of whipped cream in the base of a small dessert dish or ice cream coupe. Place a scoop of lemon sorbet on top and pour over 20cl or so of advocaat. Finish with a generous sprinkle of crushed meringue and a grating of nutmeg, if using.
