Freekeh is made from processed durum wheat, where the scorch and chaff have been removed by burning the wheat head, and it is rubbed to remove the husk and reveal an aromatic grain. Freekeh can be used like rice or bulgar, in soups, as stuffing in vegetables or as pilafs.  Our favourite is from Zaytoun, not only for it's smoky flavour but becasue of the ehtos of the company.

Zaytoun products are organically grown and sourced from small-scale Palestinian farmers, supporting their resilience and livelihoods through fairly trading their olive oil and other products.
