The Ottolenghi Test Kitchen

There’s a quirky building in North London, built from equal parts brick and tahini, walls coated in olive oil and floors stained with spice: habanero and fenugreek, Aleppo chilli and black lime. This is the Ottolenghi Test Kitchen, the OTK to some, where a group of individuals meet and eat, cook and write, tear and share and gather with just one motive: to create good food with good ingredients, and to share it with the world.

In truth, the OTK is no new endeavour, it all began about ten years ago, founded by Yotam. Over the years it gradually expanded, as more people joined the forces to make up a group of creatives. This coming and going of voices and personalities has created a space you walk into and know, ‘This place is greater than the sum of its parts’.

Our commitment to the championing of vegetables, as well as unusual ingredients has led to what some call “The Ottolenghi effect”. This is shorthand for the creation of a meal which is full of colour, flavour, bounty and sunshine.

Since 2002, the Ottolenghi team has slowly expanded, our scope has grown, and exciting new ingredients fill our cupboards, but so much, crucially, has remained the same. We continue with boundless enthusiasm and an unswerving dedication to detail; many of our team members have been with us for years, recipes, dishes and ingredients that are trusted favourites still feature on our menus and the philosophy at the heart of all we do is as true today as it ever was

Simply put, we are very serious about making people happy through our food.

A Creative Hub

Today, the test kitchen marks the creative hub of the greater Ottolenghi company, where recipes are tested, tasted and tested again before being appointed to their forever homes, online or in print, to be shared with food-lovers near and far. We are all part of this never ending conversation around food, culture, creativity and experimentation and we invite you to join us, from our kitchen to yours, wherever you are in the world.

The Team

The OTK team was founded by Yotam Ottolenghi and is headed by Noor Murad. Noor is the co-author of two Ottolenghi Test Kitchen books OTK: Shelf Love and OTK: Extra Good Things. Her Bahraini roots have a strong influence on her cooking, with Arabic, Persian and Indian flavours making a prominent appearance in her recipes.

The OTK is made up of a collaborative team of chefs, writers, doers and thinkers: Gitai, Verena, Chaya, Tara, Claudine, Jens, Clodagh, Jake and Katja. Together they cook, taste, converse and put into writing all the recipes they truly hope will make it onto your tables.

Ottolenghify doesn’t exist in the modern-day dictionary, but we think it should. Let’s say it did though, and the verb is as universally recognized as stands true in the OTK universe, here’s what we think it would say…  OTTOLENGHIFY
